GRAIN-FREE GRANOLA

Ingredients

  • 1 cup of raw almonds

  • 1 cup of raw cashews

  • 1/3 cup of raw pumpkin seeds

  • 1/3 cup of raw sunflower seeds

  • 1/4 cup of unsweetened coconut chips

  • 1/4 cup of coconut oil

  • 1/4 cup of honey or maple syrup

  • 1 tsp. of vanilla extract

  • 1/2 tsp. of sea salt

  • 2 tsp. of cinnamon

  • 1/2 cup of dried cranberries, cherries, raisins

  • 1 sprinkle of chia seeds

  • 1/2 cup of chopped pecans or walnuts

Directions

  1. Preheat oven to 275 °F.

  2. Line a baking sheet with parchment paper.

  3. In a food processor, add the almonds and cashews. You can add coconut with the nuts if you want finer pieces. I enjoy the flake so I set it to the side. Pulse until well-chopped. be careful not to pulse too much or you’ll end up with nut flour. Place pecans, coconut (if you didn’t process), and seeds in a bowl and add the nuts from the food processor.

  4. In a small saucepan over medium heat, you will add the oil, maple syrup, cinnamon, and sea salt. Stir occasionally and let heat for 3-5 minutes until it starts to boil. Remove from heat and add vanilla. Pour the sauce over the mixture and stir until well coated.

  5. Spread mixture evenly onto the baking sheet and bake for about 22 minutes or until golden brown. I know it’s ready because I will start to smell the wonderful aroma.

  6. Remove from the oven and add dried fruit and a sprinkle of chia seeds. After the granola has cooled, store it in an airtight container.
