Gluten-Free Hot Chocolate Bread

This Gluten-Free Hot Chocolate Bread recipe is one of my favorite treats to add into my morning with a hot cup of coffee, it reminds of rich dark hot chocolate cocoa!

Ingredients:

- 2 eggs

- 1/2 cup maple syrup

- 2 tbsp cane sugar

- 1/2 cup plain Greek yogurt

- 1/3 cup melted butter

- 1/4 cup almond milk or milk of choice

- 1 1/2 cup gluten-free flour

- 1/4 cup cacao powder

- 1/4 tsp sea salt

- 1/4 tsp baking powder

- 1 dark cacao bar (such as Ghirardelli 72% cacao)

- 1 cup gluten-free, vegan marshmallows

Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set it aside.

2. In a large mixing bowl, whisk together the eggs, maple syrup, and cane sugar until well combined.

3. Add the plain Greek yogurt, melted butter, and almond milk to the egg mixture. Mix until smooth and well incorporated.

4. In a separate bowl, sift together the gluten-free flour, cacao powder, sea salt, and baking powder.

5. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.

6. Chop the dark cacao bar into small chunks and fold them into the batter.

7. Gently fold in the gluten-free, vegan marshmallows, being careful not to overmix.

8. Pour the batter into the prepared loaf pan, spreading it evenly.

9. Place the loaf pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

10. Once baked, remove the loaf from the oven and allow it to cool in the pan for 10 minutes.

11. Carefully transfer the loaf to a wire rack to cool completely before slicing and serving.
