Healthier Chocolate Chip Cookies with Fresh Milled Flour

Ingredients
1 cup butter (softened)
1 cup sucanat (or coconut sugar)
1 cup honey crystals (or Florida crystals, or use 2 cups sucanat)
2 eggs
1 tsp vanilla
2 1/2 cups freshly milled soft white flour
1 cup old-fashioned oats
1/2 cup fresh ground flaxseed
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups unsweetened dried coconut
1 1/2 cups chocolate chips
Instructions
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.
In a large bowl, cream together the softened butter and sweeteners (sucanat and honey crystals) until light and fluffy.
Add the eggs and vanilla, mixing until smooth and well combined.
In another bowl, whisk together the freshly milled flour, oats, flaxseed, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
Stir in the dried coconut and chocolate chips until evenly distributed.
Scoop the dough onto the prepared baking sheets, spacing each cookie about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
