Nutritious Chocolate Chip Cookies
These are packed with protein, fiber, a great source of carbs, vitamins and minerals. I'm not saying these are slimming, but if you're going to eat a cookie anyway, you might as well make it nutritious while being delicious!
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream Butter and Sugars: In a large bowl, cream together the butter, sucanat, and honey crystals until light and fluffy.
Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the fresh milled flour, baking soda, baking powder, and salt.
Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture, mixing well.
Add Oats and Mix-Ins: Stir in the rolled oats, shredded coconut, chocolate chips, and walnuts until evenly distributed.
Form Cookies: Drop dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
