PINEAPPLE CHICKEN

Ingredients

4 Servings

  • 4 good-sized chicken breasts (approx. 24 ounces)

  • 1 whole sliced onion

  • 4 seeded jalapeños (unless you like a lot of heat)

  • 4 Swiss cheese slices

  • 4 slices of pineapples (one per breast)

  • 4 cups of spinach or mixed greens

  • Garlic powder, sea salt & pepper

  • Cooked rice (if looking to lose weight, skip the rice.)

Directions

  1. Season the chicken breasts with olive oil, garlic powder, sea salt and pepper, and sauté until golden brown.

  2. When the chicken is done, take it out of the pan and set it on a plate.

  3. Add a little more olive oil to that same pan and sauté your pineapples, onions, and jalapeños.

  4. When you are done, remove them from the pan, and put your chicken back in the pan.

  5. Put the slices of Swiss cheese on the chicken breasts until they are melted.

  6. If using rice, lay the chicken on the bed of rice. Then add the spinach or mixed greens, jalapeños, pineapples, and onions. I suggest using olive oil and balsamic vinegar as a dressing.

  7. If you are trying to lose weight, ditch the rice and put the chicken, pineapple, and veggies on a bed of mixed greens or spinach.
