Vegan & Gluten-free Healthier Caramel Sauce

Ingredients:
1 can coconut milk
1/4 cup coconut oil (melted)
dash of salt
1/3 cup maple syrup
1 1/2 cup sucanat (sugar-cane-natural)
1/4 cup water • plus 3 tbsp for later
1 tsp vanilla
3 tbsp arrowroot powder
Instructions:
Whisk together coconut milk, coconut oil, and salt and set to the side.
In saucepan add all the sweeteners and water (1/4 cup). Bring to a slow boil and then stir to make sure it doesn’t burn.
Lower heat to simmer and whisk in coconut milk mixture. Slowly return to boil.
Reduce heat. Mix together 3 tbsp cold water with 3 tbsp arrow root and then slowly whisk into caramel sauce 1 tbsp at a time to thicken.
Allow to cool for 5 minutes and stir in vanilla.
After cooled for about 15 minutes, cover and place in fridge for storage. Stir before using.
