4TH OF JULY PARFAIT

This red, white and blue parfait is the perfect 4th of July morning breakfast. It is packed with nutrients: fiber, vitamins and minerals, antioxidants… all in one cup! Plus, it is absolutely delicious, easy to prepare, and perfect to feed a crowd.

Ingredients

PARFAIT

  • Strawberries

  • Blueberries

  • 1 cup honey Greek yogurt

  • 2 tbsp. chia seeds 

  • DIY granola

  • Homemade coconut whip (instructions below)

  • Blackberries to garnish


COCONUT WHIP

  • 1 can coconut cream

  • 1 tbsp. raw cane sugar

  • 1 tsp. vanilla extract (optional)

Directions

COCONUT WHIP

  1. Refrigerate can of coconut cream overnight.

  2. Blend coconut cream with raw cane sugar and vanilla extract.

  3. Blend until well-incorporated.

*Only use the thick cream (omit the liquid) if you want a texture that’s more similar to real whip cream.

PARFAIT

  1. Layer your ingredients in the following order: chia pudding, granola, strawberries, more chia pudding, blueberries, more granola, strawberries, coconut whip, and blackberries to garnish at the very top. 

  2. Drizzle with honey if you want even more sweetness.

  3. Enjoy!
