GLORIOUS MUFFINS

What’s gorgeous, healthy, and delicious? Glorious Muffins!

This recipe proves that it is possible to eat a mouthwatering muffin for breakfast completely guilt-free.

Ingredients

  • 2/3 C raisins

  • 5 chopped dates

  • 2 C fresh ground whole wheat

  • 1 C sucanat (or coconut sugar)

  • 2 tsp. baking soda

  • 1 tbsp. ground cinnamon

  • 1 tsp. ground ginger

  • 1/2 tsp.

    salt

  • 3 large eggs

  • 2/3 C melted coconut oil 

  • 1 orange (juiced) or 1/4 C

  • 2 tsp. vanilla extract

  • 2 C of peeled and shredded carrots (approx. 4-5 carrots)

  • 1 large tart apple peeled, cored, and shredded

  • 1/2 C shredded coconut, unsweetened

  • 1/3 C flaxseed

Directions

  1. Preheat oven to 375°F.

  2. Grease a 12-cup muffin pan.

  3. Place the raisins and dates into a bowl and set aside.

  4. Combine the flour, sucanat, baking soda, cinnamon, ginger, and salt in a large bowl.

  5. Drain the raisins and dates.

  6. In a separate bowl, add the eggs, coconut oil, orange juice, and vanilla extract and mix them all together.

  7. Add the carrots, apple, coconut, and flaxseed to the large bowl (with the flour) along with the raisins and dates.

  8. Mix everything together until well incorporated.

  9. Scoop the batter evenly into each muffin well and fill to 2/3 full.

  10. Bake the muffins for approximately 22-27 minutes until golden brown or do the toothpick test.

  11. Remove the muffins from the oven to cool.

  12. Top with butter and enjoy these glorious muffins!
