VEGAN TRIPLE BERRY PIE
Oftentimes, when people know that something is vegan, they automatically think it is not tasty. Well, this vegan triple-berry pie is here to prove that wrong.
It is possible to have a delicious clean vegan meal… or in this case, dessert. And while this recipe does involve a little bit more steps than usual, it is completely worth it — and your guests will agree!
PIE GLAZE
2 tbsp. honey crystals or pure cane sugar
1 tbsp. tapioca flour (or organic cornstarch)
1 cup organic mixed fruit juice
BERRIES
1 cup strawberries
1 cup raspberries
1 cup blueberries or blackberries
Directions
PIE CRUST
In a large bowl, add sea salt and flour together.
Add coconut oil into the flour and sea salt mixture.
Use a pastry cutter or fork to cut in the coconut oil and create the pastry dough.
*Add water to the bowl and mix all ingredients with a whisk or spoon.
Transfer the dough from the bowl to the pie dish, and using your hands, start forming the dough until it covers the whole pie dish.
Place the dough inside the fridge for at least two hours.
After the dough is chilled, preheat the oven to 400° F and bake for 10 minutes.
Allow pie crust to cool before adding the cream cheese filling.
CREAM CHEESE
In a bowl, combine cream cheese, honey crystals and vanilla.
Blend all together.
Set to the side.
GLAZE
Place all pie glaze ingredients into a saucepan.
**Whisk together and let the mix come to a boil, making sure none sticks to the bottom of the pan.
Once the mixture comes to a boil, turn off the heat to allow it to thicken.
BERRIES
Place berries in a large bowl.
Combine berries with the luke-warm glaze.
TRIPLE BERRY PIE
Now it’s time to build the pie!
Once the pie crust has cooled, layer the cream cheese mixture on the bottom.
Top the cream cheese mixture with the berry glaze.
Voilà! This delicious Vegan Triple Berry Pie is done and ready to enjoy.
TIPS:
If the dough is too sticky, add a little more flour until pastry-like consistency.
To achieve a “thicker” glaze, add more tapioca flour 1 tsp at a time
