Jack-O-Lantern Stuffed Bell Peppers & Candy Corn Fruit Parfait

These Jack-O-Lantern stuffed bell peppers make for a fun and “spooky” dinner, while the candy corn fruit parfait is a sweet treat to finish off your meal. Both dishes are easy to prepare and are sure to bring smiles to the whole family!
Ingredients:
4 bell peppers (carved like Jack-O-Lanterns)
1 cup carrots (diced)
1 cup celery (diced)
1 onion (chopped)
2 cloves garlic (minced)
1 tbsp olive oil
2 cups cooked, shredded chicken
1 cup cooked white rice
1 cup corn
Salt & pepper to taste
1 can pinto beans (drained)
1 jar Enchilada Sauce
Instructions:
Preheat oven to 350°F (175°C).
Carve bell peppers with Jack-O-Lantern faces, then set aside.
In a pan, heat olive oil and sauté onions, garlic, carrots, and celery until soft.
Add shredded chicken, rice, corn, salt, pepper, garlic powder, beans and enchilada sauce. Stir until combined.
Stuff the mixture into the bell peppers and bake for 25-30 minutes, or until peppers are tender.
Candy Corn Fruit Parfait
Ingredients:
1 cup mandarin oranges
1 cup pineapple chunks
1 cup organic whipped cream
Instructions:
In small cups, layer mandarin oranges at the bottom, followed by pineapple chunks.
Top with a generous dollop of organic whipped cream to resemble candy corn.
Serve immediately and enjoy!
