Gena’s Berry Crisp
I’m thrilled to share this recipe that my friend Gena taught me. I met Gena a couple years ago through Instagram and we finally had the chance to meet in person when I flew out to Seattle this summer to see her! This berry crisp recipe, one of her go-tos, is now one of mine too. It’s quick, delicious, and packed with nutrition, perfect for breakfast or a snack. I make it on repeat, and once you try it, you will too!
Ingredients
Mixed berries (fresh or frozen)
Granola (homemade or store-bought)
Optional addition:
Berry sauce drizzle for extra flavor
Serving suggestion:
Homemade whipped cream: Mix heavy whipping cream with 1 tsp of vanilla and a touch of cinnamon. Whip for 5 minutes.
Directions
Preheat oven to 350°F (175°C).
Fill baking dish about ¾ full with mixed berries.
Generously cover the berries with granola, making sure the surface is evenly coated.
If you’d like, drizzle berry sauce over the top for added flavor.
Bake uncovered for 30-35 minutes, until the berries are bubbling and the granola is golden.
Serving Idea
Top each serving with a dollop of homemade whipped cream. The vanilla and cinnamon add a lovely, cozy touch that makes this crisp even more special!
