Sourdough Pizza Dough
There's nothing quite like homemade pizza, especially when made with a naturally fermented sourdough crust. This sourdough pizza dough recipe is packed with flavor and brings the perfect balance of chewy and crispy. Using fresh-milled flour and a live sourdough starter, it’s a healthier and gut-friendly option for pizza night. Plus, the dough’s extended fermentation makes it easier to digest while adding complex, delicious flavors.
Ingredients:
1/2 cup sourdough starter
545 grams fresh milled flour (I used hard white)
360 grams water
2 tsp salt
1 tbsp honey
2 tbsp olive oil

Instructions:
Mix Ingredients
In a mixing bowl (I used a Bosch mixer), combine all ingredients and mix for about 7 minutes, until the dough is smooth and well combined.First Stretch and Fold
Transfer the dough to a large bowl. Perform one stretch and fold: pull one side of the dough up and fold it over itself. Cover the bowl with a damp towel and let the dough rest in a warm environment for 1 hour.Continue Stretch and Folds
Repeat the stretch and fold process 5 more times, allowing the dough to rest for 1 hour between each stretch and fold.Shape and Prebake
Once your dough has rested, form it into pizza shapes. Prebake until light brown at a high temperature (450°F or as high as your oven allows) for best results.Top and Bake
Add your favorite pizza toppings and bake until the crust is golden and the cheese is melted and bubbly.
